As the highlands of Guatemala are the 4th worst in the world for chronic malnutrition, we started the course by explaining the main problems in the indigenous diet: too much salt, too much sugar, too much pop and not enough vegetables or variety in the diet. The women explained they are too poor to buy better food. However by the end of the course the women agreed that they could easily incorporate chaya into their diet for minimal or no cost.
We used lots of props in the nutrition class and the women were keep interested. We also stressed the importance of cooking chaya in non aluminum pots.
We then proceeded to make 3 CHAYA dishes: Tortillas with chaya added to the maise, Thai rice with chaya and a tomato/potato chaya dish.

Several of the women had their children at the course. The children loved all the food items. Only 4 women would not try the food. Everyone else asked for seconds.
To say the course was a hit would be an understatement. The organization that asked us to do the course want another course next week so we can teach more women about CHAYA. Our womens group attended the couse and want to start teaching about chaya in the village.
