Today we had our first nutrition and cooking classes.

The grade 3 classes learned about vitamin A and C.

I am holding a big smile in front of my face to show that Vitamin A and C are used in the development of teeth. I explain this in Spanish.

Then the teacher re-explained in Tjutujil for the students that are not as fluent in Spanish. The kids loved the big smile. We also had a big eye and bone for vitamin A!!!

The grade 3 teacher, Gaspar, is a wonderful teacher. He is also the Director of our new Basico in Chukumuk.

We then brought in all the locally available foods that are good sources of these 2 vitamins.

Papaya, melon, watermelon, carrot, red pepper, tomato, sweet potato, cabbage, broccol, potato, egg, liver, lime, orange, mandarine, strawberry, spinach.

All these are available in the market…but the families do not know the importance of eating them. They tend to eat a diet of tortillas and salt.

Deficiencies in vitamin A and C are a big problem in Guatemala. They actually fortify the sugar with vitamin A. That is because sugar is cheap and the people here consume huge amounts of sugar!!! That leads to a lot of other health problems.

One of the goals of this program is to teach healthy eating and why it is important. Guatemala has one of the worst chronic malnutrition problems in the world. The kids are given a visual picture handout of foods rich in these vitamins to show their mothers.

The students help make papaya and melon smoothies. These smoothies are excellent vitamin A and C sources. The children never get to cook in class so this was great fun for them. They then enjoyed drinking the nutritious snack.

The cutting boards, knives, bowls and blender will also be used by the basico cooking classes.

In the next week the 51 grade 3 students will all receive a papaya plant. Papayas are an excellent source of vitamin A and C and grow quickly in this region. In as quick as one year they will have a constant supply of really large papayas. One papaya plant given out 2 years ago now has over 50 papayas on it. The families can eat, trade or sell these papayas.

In addition the students are so proud of their plants that they constantly want to show them to you when you go through the village.
