Today we visited some of our family gardens with IMAP. IMAP is a permaculture organization we partner with on various garden projects. Earlier in the year, IMAP started an amaranth project with some of our families.

Amaranth is a traditional food of the Mayan people. It use to be one of the 4 staples in their diet along with corn, beans and chia. Amaranth and chia were used by the Incas, Aztecs and Mayans in their religious ceremonies. The Catholic Conquistadores outlawed Chia and Amaranth with disastrous effect on the diet of traditional people. IMAP is hoping to reintroduce them back into the diet.

The project has the families growing amaranth and collecting the seeds. IMAP leaves the family some seeds for replanting ( which makes the project sustainable) and for their consumption. The remaining seeds they purchase as there is a growing market for this superfood.

As we were going around the village we met up with municipal health centre workers who were weighing and measuring at risk children. We explained to them about our chaya project and they are very interested in attending a class on the nutrition of this easy to grow plant.
